Freshly harvested vegetables are used and sun-dried first to avoid losses of the nutritional and sensory attributes. There is an extraction process carried out to obtain the soluble solids from vegetables which is done in counter current extraction system. The slurry is further passed through decanters to remove unwanted recidues from juices. Filtration is done again to remove impurities. Finally the juices are concentrated using the evaporator and the concentrated juices are converted into free flowing spray dried vegetable powders.
